Dinner for five

A too-thick layer of fat on the meat can be problematic: putting a spice rub on a fatty layer means the spice won’t penetrate the meat itself, so that’s kind of a waste. I’ve discussed this on my own blog re: the way people (like Linus in Itaewon, who leaves a fat cap on his brisket—blech) prepare brisket. As a general rule, cut off any excess fat. It doesn’t do much for flavor unless you cook the meat low and slow for several hours in an oven. Even then, the rendered fat is more useful when turned into a nice sauce.

Anyway, for what it’s worth, the meal looked good!

I don’t think #1 is a problem for you.

The ladies seemed happy, at least, so despite your own disappointment with your food, I think the evening was a success.

If the pork isn’t behaving the way you want it to, try shredding it and then simmering it in your favorite marinade or BBQ sauce. You can get great tips by watching the BBQ Pit Boys on YouTube. In particular, there’s a technique called “the Texas cheat” that it might be good for you to master. It’s not a hard technique at all, but it’ll definitely improve your final results.

Time to take a Stand

I’ve read both versions of The Stand and find them better than the TV version(s) that came out. I think I like the original novel a bit more because (1) it’s shorter and cuts out a lot of unnecessary plot, and (2) the extended version includes the ending where Randall Flagg reappears, which cheapens everything that came before and alters the situation from a definitive Armageddon to something more like a repetitive, samsaric, Hindu cycle of creation and destruction.

You’d think that a religion student like me would appreciate the expanded novel’s subversion of Christian imagery (to wit, the move away from linear history—i.e., events culminating in Armageddon—to cyclic history, i.e., events being part of a repetitive circle), but I guess I was looking for definite closure. The shorter version of the novel provides that.

Gonna guess this is lady-related. You’ll have noticed that I stopped commenting on your love life for a year or so. My thinking is that I’ve said about all I can say from my admittedly limited perspective, given that I’m not a lady’s man (or is it horndog?) like you. Either you’ll figure this relationship stuff out for yourself, or you won’t. The other reason why I stopped commenting on that aspect of your life is that I began to cringe at my own tone and attitude: who the hell am I, after all, to presume to advise you on something I know next to nothing about? Sure, I have general insights on human nature, but I’m certainly not living anything like the life you’re living. You’re better off reading the online insights of other Western expats in SE Asia. So I’ll simply say: good luck with that. And please consider that a standing “good luck” for every future time that you blog about something going disastrously wrong. (And if the “turning to shit” has nothing to do with women, I apologize for wasting your time with the above verbiage.)

As for this:

“I really, really need to get off my ass and start taking steps to make some positive changes in my life. I’ve been in a “satisficing” mode for too long and to my own detriment. I believe I deserve better but it’s up to me to make that happen.”

Maybe it’s time to plan a long hike along the Appalachian Trail…? I don’t know. I do know that living with a purpose, even a limited-scale one, is better than living without a purpose, so if you can find some sort of ambitious project for yourself—something that takes a whole month or a whole season to do—you’ll end up feeling fulfilled, and maybe something of a badass. You could learn something new, like wood-carving or clay sculpture or Filipino martial arts. (Or Tagalog!) Carving/sculpture-related lessons abound on YouTube, and they’re free.

The gun-grabbing-gets-an-immediate-reward video was utterly satisfying. Reminds me of the video of the female rioter who gets clocked by a man (here). Sorry, no gallantry on my part when you’ve chosen to be part of a fucking mob.

The “mauvaise foi” video was good. “Existence precedes essence” is a central concept in post-WW2 French existentialism. The idea is that your life is ultimately building towards its final form: you’re a work in progress until you die, so from this perspective, you exist first, but your essence—the totality of who you are, that toward which you are building—can’t be known until you’re dead (and when you’re dead, you’re not there to appreciate that essence… oh, well). Basically, people like Camus and Sartre were saying that the cosmos is absurd and fundamentally meaningless, so it’s up to you to live an authentic life, making your own choices and following your own élan wherever it leads.

A lot of “intersectional” people (which would include most of the current rioters) really ought to watch the video you embedded: they’re all about claiming victimization and lack of alternatives because of The Man, or because Orange Man Bad, or because of some other whites-related bullshit—bullshit that has nothing to do with the fact that any one of these dumb, lazy cunts could make a goddamn effort and pull him- or herself out of his or her situation. Grrr.

Flotsam and jetsam

Yeah, the “flot” root is a clue that flotsam floats. Jetsam might or might not be debris that washes ashore, but it’s usually thrown overboard. For French speakers, it’s easy to remember that the verb flotter means “to float” and jeter means “to throw,” so a “franglais” mnemonic would be that flotsam always floats while jetsam is cast (i.e., thrown) away—maybe to float, maybe to wash ashore.

English words sometimes change to more clearly reflect their ancient roots. For example, the verb “to float” contains an “a” next to the “o,” but that “a” drops off in the noun “flotation,” whose “flot” root brings us closer to the Latin original. Same goes for the “u” in “devour,” which drops off the -vor- (= consume) root in words like “carnivore” and “voracious.”

As for the joke on the side of the truck… I think it works better as a verbal joke than as a visual one. The furniture is a “nightstand” (no space between words), and the other expression ought to be hyphenated: “a one-night stand.” (We hyphenate phrasal adjectives that precede the nouns they modify, e.g., “a tax-paying citizen.”) Come to think of it, though, even as a purely verbal joke, it doesn’t work that well. “One-night stand” isn’t pronounced the same as “one nightstand”—the syllable stresses are different. I therefore conclude that the joke needs work.

Thus spoke the overly literal, overly serious Mr. Spock.

You’ve doubtless seen the news that Joe Biden let out a long, loud, liquidy fart on live TV while interviewing with someone. I sincerely hope he does that during the debates. (Assuming he’s still in the running.)

As for putting up the lady’s picture a second time… well, now you’re just rubbing it in. Heh.

I had a female Korean commenter visit one of my other blogs and command me to spell “Noh Mu Hyeon” the “correct” way, i.e., “Roh Moo Hyun.” I didn’t change the spelling. Using “Moo” instead of “Mu” is just stupid. Why make yourself out to be a fucking cow?

Oh, what a night!

Alcohol. I just don’t get it. I’m not some prude who thinks drinkers are going to hell or anything like that, but seriously: where’s the fun in getting shit-faced and not even remembering what you did? I’ve never understood this, and it’s probably because I’ve never been a drinker. To be clear, I’m not making accusations, I’m not shaming anyone (the pics are pretty damn funny), nor am I moralizing. I’m just honestly curious, especially given the risks and dangers of alcohol consumption, such as getting into fights and car accidents.

Sorry to read about the shitty stool. I’ve had chairs break on me, too. ‘Tis the curse of being large in a country full of smaller people.
